Our FA's always sit in the empty seat, due to our ops when a crew member leaves. Recently, they now need to make sure they are buckled for their own safety and can even put on the headset to communicate better with us.
They may not know too much about flying the plane, but it doesn't hurt to have a second pair of ears and eyes, not to mention to keep them safe just in case you hit a nasty bump.
