Does that cover things like required crew rest, overtime pay, and things like that? What other types of issues are covered, what protections do they give that some carriers have and some do not? How does not having work rules at a newer carrier hurt you? Examples would be great from some of you that are more experienced.

You summed it up. Example, even though FAR's may state than the minimum rest is 8 hrs, some companies may have a "work rule" that states 10. Some companies will pay you for what you were supposd to fly that day if your day cancels due to weather, some may not. Some may pay you only if it cancels after a certain period of the month. Logic being, if it canceled in the first 2/3 of the month, you could have picked up something to make up for the lost pay. Some places, the work rules may be nothing more than just what the FARs state.
Another one with pay. You might have to work on a day off. You were finishing a trip and scheduling can send you on an overnight when you wanted to go home. A better job will compensate you, like pay you time and a half, or that as well as a day off later in the month.
