I know it depends on what kind of flying you do, but how many days off(at home) should a new hire expect? Do overnights count as days off? If anyone has a non-rumor answer to this question...or a link to a good answer, I would appreciate it.

Depens on what equipment your on. A330's, you do alot of day trips. 777, just the opposite. I was there and quit after 4 months. Wasn't for me.

Overnights generally do not count as days off. Days off in Dubai can range from 8 to 18 depending on your schedule. No way anybody can give you a specific answer.
The more important point for a non-commuter might be how many nights ( sometimes days :( ) in my own bed. Generally that would be closer to 18.

I have an interview. But I'm worried it's going to be lots of time zone changes and not enough time off to recover before back out again. Is that a misconception? Obviously, it depends on the person, but in general . . .
From a health perspective . . .

I fell asleep in the waiting room before my sim and they had to wake me up. It's good practice for when you're hired and have to go to Australia 2 days after returning from the U.S..
Seriously though, if you're worried about your health on the interview, you might want to take a close look at how EK roster.
