It has been almost forty years since I did this but we did the V1 cut in the airplane. We had a former CFIC Instructor in the unit who rode the right seat while we flew from the left seat with the FAA in the jump seat. There was no way that maneuver was going to get screwed up. When he pulled the engine, he had the proper rudder ready to go and the other leg locked just in case.
