You should probably look into Dynamic, L-3, Avenge, etc. I have friends that have got on with them for "time building". Without the military flying credentials, you probably wouldn't get on with them as a clandestine civilian pilot flying missions in Afghanistan, but you never know. What is more likely is to get on with them flying one of their various government contracts in the US doing stuff that doesn't really require a top secret clearance. They tend to like the ex-military though and those with previous clearances of your sort. My friends that got on with them built time pretty fast and used it as a stepping stone to get into other turbine aircraft. They also like people that have A&Ps.
The bit about USA jobs not giving veterans preference is ridiculous. The problem is most federal flying jobs are not meant to be revolving doors in terms of building a few hours and moving on, they usually involve considerable investment in the person and expectation that they'll be there for a while and working up through the organization. Like most jobs these days, they also want to minimize training if possible for cost. Although there comes a time when businesses will "suck dry" all the people with the experience and be forced to do all the training, they'll hold out as long as they can. The government does the same thing, so if another candidate has much more experience on the exact same platform with everything else equal, or you lack the specialized experience, the job is probably not going to happen for you.

I'm about to seperate from active duty as a "back seater", so I fly in planes but I'm not a military pilot. I fly privately and have my CFI/CFII/MEI with almost 600 hours (mostly single) and I have a Top Secret Clearance.
I currently instruct but was wondering if anyone knows of any other flying opportunities for a low-time guy with a TS clearance. Maybe border patrol or government jobs? How do I go about finding those jobs? Trying to get to that magical 1,500 hour mark!

Btw, An entry level Fed L/E job mandates that you enter on duty BEFORE your 37th birthday, (military time does not count). That's due to the Feds L/E-specific retirement system.

No...right about the time I retired (2010) they increased the age with military or prior law enforcement time. A few of my peers were hired.
