I totally agree that being a CFI makes you a better well rounded pilot, but it can take a lot of time before you have enough hours to make it to the regionals..took me 2 years.
Another thing to add about aerial surveying, yes 90% of it is vfr and easy work, but there are times when you need fly to your next project and possibly do that single pilot IFR-my friend I mentioned above flew ifr all over the country going from project to project, dealt with changing airspace, etc so I do think it does hold a little more value then most may think unless it's just a local gig. Again, CFI was a blast, and I would personally do it again-but it isn't the quickest way that's for sure.

Teaching isn't for everyone. If you don't have the passion or are a crappy teacher you won't be a good one. Dropping divers is a lot of fun, lots of stick and rudder time and if you get on with a bigger dz, will build turbine time. Check out dropzone.com or ask around. I'll be going to the regionals with over 1000 multi engine turbine pic when the time comes
