Know the job you're taking, and if you can't abide the terms and conditions work elsewhere, regardless of contract. There's no excuse for applying to or interviewing with or accepting employment from an employer and not knowing the salary, schedule, and conditions, especially in this day and age.
Frankly I'm sick to death of hearing from whining little snowflakes who can't honor their own word; it shouldn't take a contract to get you to do that. Whether you agree by handshake or by signature, do what you say you'll do. Is that really so difficult?
Don't enter into an employment situation and then decide it's not what you thought it was, because you failed to do due diligence on your part. Lift a finger to help yourself, make the effort to learn about the company before you apply, and to ring a catchphrase, know before you go. It's not that hard.
Who is going to tell you that you owe money? Likely anyone with whom you break a contract, but contracts aren't found or needed presently. Many of the operators take the attitude that if you don't want to be there, they don't want to keep you there. If you're not a good fit, they'd just as soon you be gone, as much as you'd like to go. See how that works?
