Default Instrument Flight Rules, After Months?

Training for a career path.

I have a couple of questions I hope some veteran instructors or pilots can answer.

(1)

I was enrolled in an instrument training program and completed all the ground school work required by the school per part 141 rules, and 95% of the flight training and hours as a PIC, including the 250nm cross country flight.

Training was on an analog six pack.

I then took a long break due to financial constraints and now need to get back into it and finish my training and prepare for the checkride.

Will all my ground school work still count (after a refresher)? Or will I have to do a do-over? Does it depend on the school?

I understand that I will need to spend some time in the cockpit or in a simulator with an instructor to get back to where I left off and continue from there.

Can you recommend a video course that covers:

Attitude flying
Partial panel
Cross country flight planning
Maneuvers
VOR/GPS navigation
Approach charts
Precision and non-precision approaches
Holding procedures
