It won't ever happen, alas. Plus you've got India, Vietnam, Thailand, Laos, Cambodia, Myanmar, Indonesia just to name a few. All places where wet markets thrive.
Some of the best food I've eaten in my life has come from wet markets in these countries. Literally tens of millions of people make their living by selling at these markets. I can't imagine an actual government crackdown across all of SE Asia and mainland China. Impossible to enforce. I'm sure the PRC will make a show of closing some markets, but give it a few months and they'll be right back open.
And so the cycle will begin again...
