Pizza kitchen was supposed to be pickupstix (Asian fast casual). The airport director said pei wei during the meeting Wednesday so I'm not sure if she misspoke or it changed.

They also said some pizza oven is coming over from Italy and should be in use in a week or two. I think that had to do with Crushed red, which at this point is just a kiosk so I'm not sure how the pizza fits in.
Chilis in T1/C concourse is becoming a nascar themed restaurant... odd move in my opinion but maybe they will have tallboys of Busch light.
one other non restaurant thing I forgot to mention. The director said the airlines wanted D reopened sooner than later and that it would happen regardless of if there was a new terminal or not. That part to me made it sound like Southwest wants more gates. Otherwise I don't know why it would have to happen if there was no new terminal. I'd heard previously if they opened another bank of gates that they would open up the rest of D so you can walk thru to C

The pizza oven is for self serve pizza at Crushed Red. I am not sure how that is going to work.
