During my years as a sim instructor I never logged it as "Dual Given/Flight Instructor". The simple answer is we weren't in flight. Also, 121 instruction is not like Part 61/91 in that you don't need a Flight Instructor rating to perform the instruction.

However, I did log the time for simulator time and that was my break down. No one, airline or FAA ever questioned my methods.

Also, never log any sim time as actual flight time. Many people confuse sim time counting as "flight time" for a rating vs. actual flight as regular hours in a logbook. Your PIC/SIC/DUAL must add up to your total flight time. If not you will get dinged in an interview.
