I keep a separate logbook for sim instructor time. Doesn't count towards my totals, but it's interesting to see how much time I have spent in the box. At this point, its only value is that it is meaningful to me.
And to answer your question, I log it under Simulator and I changed a column to read "Sim Instruction Given."
