I'd add that human coronaviruses don't tend to have remotely the same mutation frequency or virulence that influenza viruses do, and the "virus becomes more benign as it mutates" thing stems from the virus trying to keep replicating itself in hosts vs. killing them though I wouldn't speculate that is happening specifically with SARS-CoV-2.
