I read the tattoo policy online that says “They allow pilot tattoos as long as they are not visible while on duty and do not contain any offensive content” And I’m wondering if you in the cockpit do you also have to keep it hidden?

I would ensure it remains hidden, throughout training and in the flight deck, until off probation. Just wear long sleeves. All it takes is one “Karen” or “Mike” to have an issue with it. Not worth the hassle or risk until off probation.

If it says "on duty" it means "on duty", including when the cockpit door is shut. At least while on probation.
After that you can Pres-to-Test inside the cockpit if desired.
