Great points... But what if you are an MEI giving instruction to someone who is not multi-engine rated? There HAS to be a PIC on the aircraft, and that student can't be the PIC.... So doesn't the MEI have to be the PIC and log it as such? Just like a CFII flying in instrument conditions with a non-instrument rated student. How could that multi-engine aircraft legally move without a multi-engine rated pilot? Somebody has to be the PIC.... And it must be the MEI. How could it be logged any other way?

Pilot PIC and Instructor PIC are just different flavors of actual PIC which many employers prefer to see broken out.
Sole Manipulator PIC is NOT real PIC in the eyes of most employers, it's just a regualtory gimmick mostly applicable only to experience required for ratings.
If your CFI days are behind you, you can simply tally up the CFI PIC once, keep a note of it, and subtract that from your total PIC to get a pilot PIC number when needed.
But if you still instruct, you may be better off logging CFI PIC separate from pilot PIC just for your own convenience.
Note: It's possible but rare to not be the actual PIC while giving dual. In that case your dual given would NOT be the same as your instructor PIC. But this is typically only done if the CFI does not have a medical.
