2. If you don't log it, are you going to lie on the background and PRIA forms to hide that employment? Might get away with cash under the table part 91 stuff.

That was always in the FOM back in the day. I knew plenty of folks who disregarded it after 117.

When I started 3 years ago the FOM stated that pt 91 and flight instruction was okay but that 121/135 and 91k needed approval because of 117 limits. The policy I stated was signed July of 2018

Unless I’m reading it wrong this LOI states flight instruction IS ‘other commercial flying’

BUT, if you're under the 117 rules, then the only flight time that counts against the limitations are operations for a 121/135/91k operator.

3. Help you build hours more quickly because the goal IS NOT to stay at a low wage regional job as long as possible.

I believe that Part 135 allows flying on the side, but only Part 91 flying. Part 135 + Part 135 is a no no, and Argus won’t let you be Argus with another company to the best of my knowledge.
I know many Part 135 pilots that have Part 91 side gigs.
But, back to your original question, a LOT of pilots are REALTORs... It’s the toughest mini law exam I ever took, but it helped me get commissions on the sale and purchase of my houses. It’s not a bad gig...

Thats my plan if I do make the transition to commercial flying. Spent 20 years building a law practice so there is no way I would just close the doors, in fact I simply couldn't do it from an economic standpoint. With remote computer access, scanned documents/e-mail and video conference, I could continue to work remotely during down time, of course at a reduced work load. Thankfully my wife is the office manager and I have a paralegal that has been with me for 18 years so I have the backup to try to pull something like this off.
