Question: if autopilot and autothrottles were engaged, does manual input disengage the A/P? Example: on the E145, you could get trim activation until A/P disconnect or trim cut out. On the 737, manual control input reverts automation to CWS mode.
Does the 767 do anything like this? Or can you hold enough back pressure to maintain an altitude without A/P disconnect?

Manual pitch trim kicks the autopilot off.
You can manually move/override the throttles, but that doesn’t shut off the autothrottles. Any one of three switches will.

I have zero experience in 76 so I’m just trying to learn and in the course of this, I am 100% confident that it was not intentional.

Yes. I messed with it in sim (desktop) with boards up, flaps up, alt selector to 3k coming off of GILLL at 230/7000 on a 270 heading, speed selector 210kts, and LVL CHG. Held back pressure on control column. Autothrottles went max selected thrust rating as speed slowed to 230-210kts region, trim ran full nose down the whole time. As thrust increased, nose went up approx +5degrees. When back pressure released, nose dropped almost instantly to -30. This was with no stick shaker or pusher activation in a desktop sim.

The A/T will not disengage if you override it, to be able to apply full thrust and have them stay there, the A/T need to be disconnected.
Does the 767 do anything like this? Or can you hold enough back pressure to maintain an altitude without A/P disconnect?
The 76 has weak servos on the A/P system, you can override it and make control inputs, but the A/P will eventually disconnect if the inputs are extreme.

Why would you be pulling on the yoke with lvl change and autopilot on? AP off would only move the flight directors. Don't fly the 76, but the 744 which is one gen newer in the cockpit. With AP on, it has the yoke. Of course your desktop sim doesn't have force feedback, does it? And I highly doubt it would model the 767 logic in every way.
