Hotel Vondel is a great hotel in a perfect location. During the Fall, Winter and Spring they offer very good rates. Great staff and big clean rooms.

Just went there myself, you can buy tickets to the Anne frank house online before you go and you'll be able to skip the line. Also The Times Hotel isn't a decent stay for a decent price. Clean, friendly, and a great location. Rooms are small and is definitely a no frills hotel but it fits the bill quite nicely!

For a good place to run or ride a bike take the free water taxi behind the central train station to the other side of the main canal (Amsterdam-Noord)...

I would definitely suggest buying the tickets in advance for the Anne Frank house (they are generally sold out up to two weeks in advance). We tried to go, and the line was at least two hours long to get in. We ended up getting to do the Resistance Museum which was really cool and definitely worth our time. Renting a bike seems like it would be fun, but once there, the biking in town seemed very intimidating. Just walking around town is very interesting, and the public transportation is really affordable and easy to use too. Great city to play tourist in. I wish I had more time there.

So many great restaurants

Great museums

In warm weather ...

short train ride out to Zandvoort an Zee

Cafe sidewalk table by a gracht ... watch locals go by in their boats

in the spring you have to do the Keukenhof

all that said, I never had as much fun as the guy that had his uniform torn up and his hat peed in .... had to call the cops to get the naked flight attendant out of his room

so many ways to have fun in AMS :)

Do Anne Frank in the winter/off season ... no lines
the cold and dreary helps the experience

renting bikes is great ... however, they have strict rules that are enforced ... better to take the bike on the free ferry over and ride through the neighborhoods

Rail passes. There are 3 day rail/bus/ferry passes for 19 Euros. There are passes that are good for most of central Netherlands. There are passes that get you anywhere in the country for not much money.

Gooithorn, Delft, Middleburg, Zaanse Schonse are all accessible. If you like weird stuff that's beyond Amsterdam, there's a church that has mummies naturally form in its vault located in the northwest of the country. There are some obscure maritime museums in some of the coastal towns. You can tour the great cheese cities of the Netherlands (Edam, Gouda, etc.). You can get really dorky and look at the shot-up bunkers on the coast near Groede or hang out in Arnhem.

There are also ferries to more remote islands that aren't super-touristy.

Amsterdam is amazing but it's just as cool to get out and sniff around the rest of the country. All of that is easily doable on an AMS overnight. Of course, this all assumes things open up again.
