This website is great for train travel all over Europe. I’ve done Maastricht to Paris. Piece of cake. I think I had to switch trains in Liege. The earlier you buy your tickets the cheaper they are.
This is a good website for buying tickets that use train networks in more than one country.

Otherwise, the DB website (German) is good and also has a good app worth downloading.
And you’ll have to Uber from the train station in Paris to the hotel, unless you want to drag your bags through the Metro. Which is fine if you are also carrying a firearm.
