I don't have any experience with the logbook that offer that, though I'd still be very leary of digital signatures. They may not fulfill the legal requirements of a legal signature.
For those in the know, once a lesson is signed off, can the hours on that line be altered in anyway?

Under Part 141 logging and accounting systems such as ETA can be approved for record keeping.
Which means only somebody with Admin privileges such as the Chief FI can make corrections.
As far as a random electronic logbook, no idea.

The one I was thinking of is Log Ten pro. I went and checked and how it works is that both you and your instructor need to have accounts. You fill in the information for the flight and send it to the instructor for digital signing. The CFI then "signs" it, at which point the document is locked and only the CFI can edit the information.

Not sure on the legalities, but it is the best elogbook out there so I would imagine they looked into the legalities.

Yep. LTP is legal for sign offs. If the instructor does not have LTP just keep a paper copy of the sign offs.
