Reinstatement of CFI

I can't really see that anyone would have a "re-instatement" course.
You have to retake the checkride (not the written) for ANY one of the privileges on your CFI cert...that will re-instate ALL of the privileges on your expired cert. If you have multiple privileges, most folks would re-take the CFII ride since that is more limited in scope and straight-forward than other rides, and doesn't require a twin or retract. Also if you're an active professional pilot, you're probably current on instrument flying anyway.
You could either self-study to refresh knowledge and then work with a CFI to get ready for the ride, or if you really wanted to you could attend any CFI training program although I would consider the latter to be overkill unless you have been out of aviation for a while.

American Flyers have a Houston, TX location. It's out of Hooks airport. As for what it consists of... you renew 1 CFI, and you renew ALL of them. So, pick the one you feel most confident with, and you're golden. This is where I disagree with Rickair7777, most of the time, the few dozen that I've done have all picked their CFI-A...

I have reinstated my flight instructor certificate twice in the past, after letting it lapse. On each occasion, rather than rehash an existing rating/, I just added a new one. If you've got to take a checkride anyway, why not?

Yeah if I was in that boat, I might do a glider rating.
But if you already have all the airplane ratings and don't have significant aeronautical experience in gliders or helos it might be more time and cost-effective to just re-do the CFII.

I am halfway through AOPA eFIRC and have built up a substantial, updated CFI library for review and instructing. Can anyone recommend a DPE in the Houston area for a reinstatement? I have found the list of DPEs on the FAA website, but I’m looking for recommendations.
