There is no requirement for an instructor to be seated in a front seat, at the controls. That said, it is hard to physically correct a student's mistake if the instructor is in the back seat. So the instructor should be certain the student knows what he is doing and is capable of making appropriate corrections. Not much different from doing instruction in a Bonanza with a single yoke, or a tandem seat airplane with only one set of controls.
