Why not wait for a Global FO position? Talk about variety of flying! That's a big, comfortable cockpit too...
Anyone know someone who has made that switch as an FO to the Global? What is the QOL like on the Global fleet considering the different types of flying it does?

Understood. My feeling is, if the Global as a PIC is going to out of reach for so many, why not try for it as an FO and get that varied flight experience for a few years? Flying between MCI and APF or between VNY and ASE is really no different in the XLS vs the CL350/680A. Just my opinion... Global time would also be valuable in the market.
Contract flying is also growing as operators are having greater difficulty finding QUALIFIED pilots and a Global rating is certainly worth more than a Sovereign type rating.
That said, downgrading yourself from PIC on ANYTHING to SIC on the Global is, in my view, foolhardy. It seems as if that practice has slowed somewhat.

For an FO who can hold it, it would definitely be an attractive opportunity to pad the resume and see a few places beyond the ordinary.

I know 3 FOs actively applying to the airlines. Only one buddy on the XL fleet intends to stay.
