If the hands touch in-flight and it's not an emergency, there's the Man Law that requires eyes straight ahead, immediate conversation topic change to beer, sports, or politics, and no acknowledgment of the touch. The topic change is not required if the touch is briefed along the lines of "if you feel my hand on the throttles, it's not because I love you."
Men would be well to follow the law if the other person in the cockpit is an unacquainted female to avoid premature slappage, FO unsat reports, or worse.
