Smoking Challenge
The Austin BBQ Tour last year inspired me to try my hand at smoking. I was particularly impressed with the operations at Salt Lick, but there is no way the City Council will let me convert my backyard into a smokehouse.
So yesterday, we bought a rudimentary electric smoker. I chose electric because I couldn't figure out how to add more charcoal into the pyre. Today, I'll brine some chicken, and put some dry rub on the beef ribs and babyback ribs. I got some dry rub from Rudy's. I'm also going to smoke salmon, tilapia, oysters, onions, peppers, garlic, baby bok choy, lamb shoulder, turkey drumsticks. Did I miss anything? If all works out, I've got my eye on the $1500 model. Gulp. |
I too was inspired by Texas bbq, and took up slow-cook smoking a couple years ago. Love it. The perfect hobby for those who love to cook outdoors and eat. While my brisket may need some fine tuning , I think I've nearly perfected turkey and ribs.

Hmmm, the thing was smoking away very well when it stopped around the second hour. I opened the little door, then the lid, to find that most of the wood chips have been burnt to nothing and the grease from the ribs all fell into the water bowl.
I grabbed one of the beef ribs out. Cut between two bones and it's not ready. It's been 4.5 hours now. |

I use a full up redneck engineered barrel smoker made from a genuine 55 gallon drum. I'll have to look into this egg thing!

I've been using a Weber Smokey Mountain with mostly fabulous results. I'm curious about The Egg, but find it hard to imagine that any improvement over the Weber would be worth more than twice the price.
