Having flown the 321 to the islands for the past 3-1/2 years for AA, I can tell you that there are no weight issues heading to HNL and KOA from LAX, even with the worst winter headwinds. Coming out of LIH, we typically are about 15-20 seats below full, but that’s due to the braking ability at a full load on that short runway.
OGG to LAX leaves maybe 5-10 seats empty.

The standard A321NEO configuration doesn’t have overwing exits. This includes those in the HA fleet. Door 3 is just aft of the wing. I believe the higher-density Flex Cabin layout has overwing exits in addition to the doors.

As mentioned above not all A321 Neos have the Airbus Cabin Flex configuration as it continues to be an option until Airbus transitions to the new standard baseline configuration(ACF).
