Took 6-7 weeks for me to get from virtual to interview invite. Factor in holiday craziness as well.

Default Virtual

Just wondering if JB sends out a TBNT email after the virtual. If not, I’ll be patient as heck.

Yes. You’ll have the ability to nonrev as well as CASS and KCM access starting your first week.

Dependents should have privileges on B6 flights immediately. I think for offline flights, you and your dependents might have to wait 60 days

I think they do, but it took awhile for them to send out the you've been selected for an in person, as others have said, no news is good news.

Default Non-rev benefits

What are the requirements to list my significant other (not married) as my companion to receive flight benefits? Do I have to prove that we live together, share bank accounts, etc?

Looks like you could list as a domestic partnership and fill out a bunch of paperwork and get it notarized, including proof of partnership like the examples you gave.

There is an option for single people to have a travel companion, but there’s a note in the guide about not living together, so that may not work for you.
