The link should help with your questions. At DAL we have more efficient trips, which results in more days off per month to be with your family. New reserve rules from the new contract as well.
Best QOL IMHO, live near a Delta hub and bid long call. ATL or SLC are your best options for your requests in your first post.

I’m a mil pilot with a CJO from SWA, AA, UA, DAL. I’m interested in cargo, but I’m 50 PIC hours shy of 1000.
I’d like to hear your thoughts on which airline could provide the best QoL while my kids are little (they’re just starting elementary school). QoL for me means living in domicile and maximizing my time at home for the first 5 years or so.
I grew up overseas, so I don’t have geographic ties to a specific location, but prefer to live in a lower cost of living area.
My initial thought is to fly for United at IAH due to their projected seniority progression and wide body growth plans.
In my circle of friends, it seems Delta is the “place to be” with their new contract. However, I’m concerned about their slower rate of seniority progression after using the widget seniority.

First, toss out AA and SWA if you want the option of upgrading in a year so you can get the extra PIC once UPS and FedEx restart classes.
Take a look at UAL and DAL bases and decide where you want to live, then go to that airline.
No preference? Go to DAL- they’ve got the sustained superior contract. Want to fly widebody, or loath DAL bases? Go to United.

If you and your wife truly don’t care where you live, then go DAL. They have the best track record in recent decades. Then pick a base that makes sense for you, don’t just move to NYC because that’s what you get at indoc. SLC could be good depending on where you move, I think DTW could be awesome. And ATL can be too. AA doesn't have a monopoly on good bases.

Based on my circumstances, it seems it’s boiling down to flying WB sooner at UA, working 10-12 days/month, versus flying NB at DAL with slower seniority progression, but with a historically superior contract.

Concerning QoL, does DAL’s “superior” contract trump UA’s seniority progression/widebody opportunities?

If red-state suburbia suits you, IAH is straightforward and easy to get.
If you wanna get 1000 and move on, don’t go to southwest.
Otherwise there are arguments for all of them. United requires 12 months before upgrade. delta may have a quicker shot at 50 pic but you’ll definitely be bottom of the totem pole til brown or purple call.
