I’m in the same position as you.
I log the seat time.
So 11 hr flight with 3 Crew I log time I’ve sat in a control seat left or right as SIC. Separate column I keep track if that time was PF, PM or relief pilot.
That way I have a record of all time, TT of the entire flight ( which technically I could log in it’s entirety as SIC) and my seat time and in which function.
In the remarks section the flight # and the Captains name.
Total time, seat time, capacity, PIC name and flight #.
Me tinks that covers everything anybody would ever want to know.

I got it. No logging of time in the biffy, in the bunk, taxiing, penalty box, deice pad, etc. I'm wondering if I can log the time while in the seat and "resting my eyes".

You can log double as you're multi-tasking.
