If you have more than 24 hours, try the "sand surfing". You will need long pants, shorts don't work too well AND then you can go snow skiing. An in-door single run was just finished about a year ago.

Go to the Souks (markets). There are spice, perfume and gold souks all within walking distance from one another.

Great Duty-free shopping at the airport. If you win one of the cars (each ticket is about $100) they will deliver it anywhere in the world at no additional charge.

Lots to see and many fine places to eat and drink. Dubai is "wet".

Sorta wet, really. One thing you can't as a visitor do is stroll into a liquor store and buy a 6 pack of beer. There are liquor stores, but you can't shop there unless you have a resident visa. So, if you want to have something in your room, hit duty free as you exit the airport. Or you could take a cab to Abu Dhabi or Um al Quain where a non resident can shop in the liquor stores.

According to this article, tourists can get a license on the spot. Either way, it's not worth driving around to another Emirate via cab just to purchase alcohol. Duty-free upon entry or just get it at the hotel for a bit more.
