That is the minimum for E120 FOs. For the ACP (Accelerated Captain Program) the numbers are around 800TT along with the 135 captain minimums for IFR and night time.

Yes, still 500 TT for our regular FO positions.
Here are the full flight mins for it: 500 TT, 25 ME, 100 XC (defined as point to point), 25 night, 350 PIC, 75 instrument
The TT can be lowered to 450 hours if the pilot has structured flying (instructing or similar).

Our other FO position has higher flight mins.

Training location depends on aircraft, but all training starts at HQ in Dallas, Texas (DFW).
The first two weeks are in Dallas. The next two weeks are in Dallas for the BE99, Denver for the BE1900, San Antonio for the Metro, and Atlanta for the EMB120. The last two weeks are wherever our availability is (training Captain and aircraft).

While in training, Ameriflight pays a training wage and covers travel, lodging, and per diem.

Is it common for people to be hired at the minimums? I only have around 300TT now but should have 500+ in a few months and will meet the 350 PIC and already have the night, XC and instrument time. Just have to get my multi add on. Is 25 multi a hard min? Thanks.

Yes, it's pretty spot on at the mins. The 25 Multi can be brought down to about 18, as you'll get a few hours in training.

Anyone have info on vacation time for new hires? When does it start or how soon can you take it? I see the website says 80 hours.

The way I read the handbook, you don't receive the 80 hours all at once. Instead, you accrue 6.67 hours per month (times 12 months is 80 hours for the year) beginning from your hire date. But you are not eligible to begin taking it until 90 days from date of hire.
