Can someone give a run down of what a “day in the life” of an ISR pilot is? How varied are the company cultures between Dynamic/L3/Avenge/CAT/Sierra Nevada etc? Do you have the option of where you want to be sent geographically? How many hours do you typically fly on a 60 day rotation?

Location will probably be dictated at first, with some chances to volunteer later on... really it's needs of the company so Semper Gumby.
Live in darkness, in a room that definitely wasn't cleaned by the previous occupant, surrounded by way too many grown men who don't know how to clean up after themselves, and be prepared to eat bad steak and asparagus or spaghetti for breakfast and overcooked omelets and bacon for dinner. It is almost like a prison work-release program that pays really well and has a great Medical and Dental plan.

Or you could come to CAT and fly 4 days a week, albeit 10 hour missions. Then come back to your massive house with a pool and maids and cooks. Never do your own laundry. Go out in town whenever you want with company provided drivers. We’re hiring.

Wakeup, Gym/food, mission planning and preflight, fly for 5 hours, post flight debrief, gym/food, do something to entertain your self for a few hours and go to bed. Total amount worked, 8 or 9 hours. Fly maybe 4 or 6 days a week, about 110 hours a month. Days off are for laundry, checking PX shelves, drinking coffee, watching Netflix, extended gym sessions, working on your golf swing, reading....

Saw a couple SIC postings from a company a couple months back, thought they said they wanted 500TT minimum for these...
I’m about to finish up flight school with a Comm MEL/CFI/CFII/MEI and about 240 hours TT. Prior service (AF) non-rated, I believe an out of scope clearance until 23’, college degree.

If the contract is being operated under 8210 then it depends on what is authorized under the particular contract. Not all contracts are authorized Co-Pilot (or referenced as SIC sometimes casually). If Co-Pilot is authorized, then they would have to get you qualified in the particular mission, type, design, or series before operating under that contract as long as you met the other basic hour / requirements.
As for what each individual operator internally requires at or above those requirements is up to them.

4.3.3.1. Pilot. The pilot must be qualified in mission, type, design, and if appropriate, series of aircraft. The pilot must have not less than 1,000 hours Pilot-in-Command time.
In addition,
4.3.3.1.1. For fighter, attack, and trainer aircraft, the Pilot-in-Command time must include 100 hours in the same aircraft type and design.
4.3.3.1.2. The Pilot-in-Command time for other aircraft must include 300 hours in similar aircraft type.
4.3.3.2. Copilot. The copilot must have not less than 500 hours Pilot-in-Command time and be qualified in mission, type, design, and if appropriate, series aircraft.
