I went to aviation interviews to see the experience of others. What does it mean when someone walks in your stuff?
Is it the resume?
Resume and cover letter?
What is it?
and to whom do you give the stuff to?

It means someone that works for the company brings your CV and resume to the person in charge of hiring. For example I had a friend I fly with bring my resume and Airline app application for Eagle to his father who is the BOS safety manager, he brought it to the BOS chief pilot and he brought it to DFW chief pilot. Hope this helps.

A walk-in should not include your cover letter. The person walking in could write an introduction letter (or you write it and he signs it).
The recommendation states why the company should hire you and how your referral knows you. The cover letter introduces you and expands on your resume.
