Would flight instructor be a good way to log flight hours. Would it be better to apply to different companies and work up that way. My mind is going crazy right now.

But generally, getting your instructor tickets is a common way of building hours and advancing skills as an aviator. There really are not too too many possibilities for work as a low time pilot. Banner, pipeline, and traffic, are some that come to mind. My advice: instruct. It will make you a better pilot.
