I don't think the secret is so much in the ingredients, as you could more or less figure that out with a little experimentation. Their signature taste seems to be how they prepare the noodles. We've all eaten at lots of noodle shops in Asia and the ingredients all look the same, but the noodles are definitely different. Whether that's preparation or how the noodles are made....well I don't know that answer.

I agree, that noodle soup is the best. I am in Narita now and gonna get some....yessss

I haven't been there since 2001, but I loved that place. Same vote as someone else: noodle soup and gyoza!

Go spicy and add in pork. Hit the Jet Lag on the way back and watch the owner's little dog walk up and down the bar

If you go back to the noodle shop to forget to stop in and get some spicy popcorn at the Jet lag and tell Vincent and Inop hello. Only once have I ever seen a girl dancing on the poll over at the Jet lag, but I gotta say, she classed the place up a bit.

I have asked for the recipe for the spicy pepper soup and for the Ramen with pork. I don't think they will give it up. I also understand the broth takes about 8 hours to make.
