Let me be more direct.
May I go home and complete the CBT from my home in another state? Is there a reason that you must stay near the training center, to complete CBT? I would like to see my family a small bit during training. Has anyone flown home and completed their CBT from home?

Yes. I took my computer home and did CBTs from there. All you need is internet access and the ability to get on SkyWest Online. You can do it from anywhere.

How often were you able to go home during training? Or have visitors? One of my friends who previously did training with SkyWest said there was really only one weekend where people were able to leave. Is that still the case?

The guys who live locally actually tend to struggle more. In that case the smart play is to stay at the training center or go to the hotel with your buds and study the same hours they do. Then go home and kiss your wife and kids goodnight.
Sim is different, schedules vary, you might have one day off or four days off each week. Play that by ear based on the schedule.

First off, it depends on which aircraft you choose. CRJ after indoc you'll have 5 days to get them done on your own time. ERJ i'm not sure how different its structured but you'll have the CBTs and a systems class after.
You can do it at 6pm or you can do them at midnight. Being that everyone has the gouges with the answers you can blast through them if you want with out learning a thing. (Don't do that, had one person do that in three days and had trouble keeping up)
It's risky to go home if you're a number of hours away, but doable. Just have to stick your nose in it for a number of uninterrupted hours. It's not part of the course, let alone mentioned, but You will find yourself looking through the Reference manual because the CBTs only go so far describing what ever system you're on.
