I understand that negotiations can start 270 days prior to the ammendable date on the current contract and there is really no hard date on when there has to be an agreement between both parties. Is this correct? It has been several years since I was at a 121 carrier but I seem to remember that there were some airlines out there that were in negotiations even after their contract had matured.

You are correct.
The American pilots are still working under their 2003 contract which became amendable on May 1, 2008.
They've been negotiating ever since. With no end in sight.
That's why they called in ALPA to help.
Whether ALPA's team will be any help is an open question but they sure can't do much worse.
