In the US, our employers don't stamp our logbooks. In fact they usually don't even touch them. US employers will generally take your word that your book is accurate, unless they have reason to suspect otherwise.

Outside the US, I cannot say. But I would assume that you could apply to other airlines and get a job offer pending verification of your records after you resign.
