The 141 University program I graduated from also had an emphasis on Human Factors which may seem boring at first but really gave me a good insight into how everything is designed - from cockpit layout, to airport signage, to charts, etc.
I also had courses in jet systems, 121/135/91spK regulations, accident investigation, crew resource management (multiple courses). These are all things that helped me be a more well rounded pilot.
Many people say the best way to become a pilot is a mom and pop part 61 school, but if I did that - I would be short on all the enrichment I had from the other courses. I know because I started my training (private and instrument) in a part 61 school and most people were so 1 dimensional. They could fly their cessna 172 in a GA environment and not much else.
