I've flown the DC9, 319/320 and currently fly the B757/767. Your statement simply isn't true. The only thing the 319/320 provides that the B757/767 doesn't is that with the autopilot disengaged the aircraft trims itself. Also V1 cuts are slightly less laborious in the 319/320. But you can watch both aircraft types fly all the way to a stop. You can "monitor" the Boeing just as much as the Airbus.
One thing I do miss about the Airbus 319/320 is the tray table. It's so hard to eat my Business Class meal from a tray on my lap.
