Yeah that's the issue with the 737 from my perspective. Sad that the 757 was designed with such a better cockpit and now it's a discontinued product and we're back to the 737 cockpit from the -100. I've heard the reason the 737 wasn't upgraded majorly up front was that it would require a new type rating for pilots. I'm not sure I understand this, look at the DC-9 and 717. Same type, WILDLY different cockpit. FAA favoritism?
From the guys I know at Boeing the reason is Southwest wanted to stick to the same design. They were considering a new twin aisle to replace the 737 but it was dependent on what WN wanted to do.
