I know this doesn't answer the FAR question, but Boeing and Airbus mechanics and software tend to keep things less than 31 degrees. I also agree that much more than 30 makes people scream in back. They are very sensitive to load, and when things aren't very close to 1.0 g, they get pretty upset.
And I believe my glass ADI (originally from biz-jet) goes amber at a bank angle as well as GCAS squawking 'bank angle' (I need to look those up again!), but advisory information is not law (as I know you're aware). I think what this is is really good, safe practice that has become defacto 'law' by virtue of being nearly universal. I think for my hypothetical, it gives me an out. Now, to convince the ACP...actually, he's very open minded about stuff.
