Sounds like either spin training or an unintentional stall-into-spin with no seat belts on to me, and what caused the canopy to pop open was the student smashing up against it.
Just speculating...
They got into an inverted spin perhaps. Right side up shouldn't throw you up against the canopy.
Unless maybe they were playing around, but I always tighten my seatbelt before I start playing, "Hey, watch this!"
