Fly. Period. I wouldn't sit around for weeks. A year out of flying? I'd never do that.

IMO you're on the short end of TT. 750 single seat has more value but even that is low for a retiree. Helping young guy with 1000 single seat and 2600 TT and IMO he's at the low end.

$.02 - Identify your resume weaknesses and strengthen them. If you can swing the pay I'd take whatever job flew more. Fluff the TT as quickly as possible. No one knows what the triggering numbers are but at the low end you can make significant percentage gains. In just over a year of hustling(fly 1000 hrs/yr) you could increase your TT by 50%(3000 TT).

And the 121 experience would be something completely new. Everyone learns something from a new job. Good luck.
