I do find it interesting that we are still interviewing even though the pool + flows is already enough to more than cover what remains of the original 300 openings (including furlough returns).

The 300 number is meaningless. When we had to spool up for hiring that was the number that was used to put a cost to hiring and was approved by the BOD. The "plan" right now is that we will be hiring for the next 15 years.
That can change tomorrow and so is also pretty meaningless.
FWIW I have heard some ridiculously specific numbers recently (closer to 3 times the 300 number than 2 x the 300 number) and then within 2 hours have heard a number closer to 2 X the 300 number. As you pointed out we are already blowing through the 300 number so that should satisfy everyone that the 300 number is meaningless.
We will probably change the "official" number in the late spring/early summer. And yes new hires going directly into the ER is being discussed and may happen.
