Good choice on the instructor route.
As of a year ago, they had a deal where if you stay with them for 800 hours of instructing (that should be about 8-10 months), they will reimburse you for the cost of your CFII and MEI. That's a solid $10,000 bonus. And you will need those 1050 or so hours in order to get on with a good regional (Skywest, Republic, Horizon...).

Also, at flight safety, they do instrument ratings in a mult engine aircraft, so you will have plenty of multi engine time!
