Yes to paper charts. The whiz wheel is during training only because the simulators do not incorporate ACARS.
Forgive my ignorance to airline SOP (I'm 135) but I only know what the acronym for ACARS stands for. I'm assuming it a wt & balance computer program used by airlines?
