Here's the deal with Flight Instructing for a university. The fact that you're going to have to stay there for a long period of time can work for you. They will be more likely to move you up into more "management" positions where the instructing is much easier and you make more money. If you can suck it up for a year, you can open the door as an ACI (usually salaried) or Check Instructor. Then all you have to do is sit around and watch other people's students f*ck up. WAAAAAAAY easier than actually teaching.

P.S. - There are several guys at my old flight school who started as students and have stayed there 6+ years, some foreign, some not. It's not THAT bad...and if it gets what you need than more power to it.
