It looks like the company has 38 aircraft on order through 2018. Can they defer any of these (like they just did recently with other aircraft)? Can they cancel any of these?

The higher ups at the interview made it seem like the E190s on the books for delivery later, will never see the light of day.

Just looking to learn more about the order process, and take any predictions.
Aircraft orders are definitely not set in stone. They can be deferred, accelerated, canceled, or even sell the delivery slots to another airline. Manufacturers want repeat business, so they dont usually have any big financial penalties for airlines shifting around their order book. Cencal hit the nail on the head by saying dont believe it until youre actually flying it.

The E190 deliveries are so far in the future, and Embraer has even stated they won't be producing the regular version of the E190 after 2018. Id be shocked if we do actually receive those aircraft, and if we do it will be for replacements of the current E190s (and probably reduce the overall size of the E190 fleet).
