I believe the tipping problem is more society in general. I have thrown down a few extra bucks after everyone else has left the table even when out with non-pilot people. I worked in food service before and I think people that have generally have a better understanding. Always tip on pre-discount amount.
I spent years in the food biz as well and totally agree that you understand better. Always tip well (unless bad service and I don't mean busy server induced bad service but inattentive server)
